Instead of a blog this week, here's a healthy and fun Mother's Day breakfast menu that Dad and the kiddos can prepare for Mom. Have fun and don’t forget about the clean up!
Drinks:
Strawberry and Banana Smoothie
Instructions:
- Add 1 banana, 1 cup of frozen strawberries, and 1 cup of almond milk into a blender and blend until smooth.
Appetizer:
- Greek yogurt parfait with mixed berries and granola
Instructions:
- Find Mom’s favorite flavor of Greek yogurt. Layer it at the bottom of a glass cup or bowl
- Add the mixed berries on top
- Then add the granola
Main Dish:
- Veggie and Egg Muffin Cups
- Sweet Potato and Turkey Sausage Hash
- Whole Wheat Banana Pancakes with Peanut Butter sauce
Veggie and Egg Muffin Cups Instructions
- Whisk 8 eggs together
- Grab about 1 cup of Mom’s favorite chopped veggies of choice (spinach, tomatoes, bell peppers, mushrooms, etc.) and add to eggs
- Pour into greased muffin cups and bake at 375°F for 20-25 minutes.
Sweet Potato and Turkey Sausage Hash
- Dice 2 cups of sweet potato and add to skillet with olive oil
- Once sweet potatoes start to soften, add a half of pound of turkey sausage and cook until browned (about 10 minutes)
Whole Wheat Banana Pancakes with Peanut Butter Sauce
- Mix 1 cup whole wheat flour, 2 tablespoons of honey, 1 teaspoon of baking powder, and 1 mashed banana in a bowl.
- Spoon about a half a cup onto a hot griddle.
- Once bubbles start to form, flip the pancake and cook for another 2 minutes until both sides are a golden brown
- Mix 1/4 cup of peanut butter and 2 tablespoons of honey for the sauce.
